while the pumpkins have been displayed around the house for a few weeks
& the mums have been on the porch long enough that they're actually struggling to hang on,
fall doesn't officially begin at our home until the first loaf of pumpkin bread has been baked.
caroline has been kindly asking for her favorite treat for several days. she & i locked pinkies in an official pinkie promise yesterday before she walked out the door. the promise being that she would indeed walk in the door to that glorious smell.
i had fully intended on going all pioneer woman on ya'll & photographing the process. or at least featuring a slice of the glorious bread on a plate, maybe a few crumbs placed strategically around. as real life would have it, i was in such a hurry that i just dumped all the ingredients in a big bowl at once. no mixing dry ingredients first. no whisking the eggs before adding them. & if truth be told, i popped those babies in the oven before the oven was completely preheated. & friends, this is old school pumpkin bread. complete with bleached white flour.
i hang my head in shame.
60 minutes later, my kitchen smelled like heaven & despite myself, i had two perfect loaves of chocolate chip pumpkin bread. clearly a fool proof recipe. this was given to me years ago by a friend & i'll gladly share with you. it yields two loaves so you can share the love with your neighbor.
Pumpkin Bread
3 1/2 cups all purpose flour
3 c sugar
2 tsp baking soda
2 tsp cinnamon
4 eggs
1 can pumpkin ( not filling)
1 c oil
1 c water
1 pack mini chocolate chips
bake at 350 for 60-70 minutes. yields 2 9 inch loaf pans
i'm heading out with madison this morning
to have, her as the orthopedist put it, "whoa, that's most certainly a broken nose" nose reset.
while her nose is obviously broken,with it's extra dent down the center
& leaning off to the right
complete with her shiner
& swollen face
the child is much much more disappointed that she will not be allowed
to compete in their final competition saturday.
last night as we sat around the dinner table
dan prayed & thanked the Lord for our blessings,
& asked that "everything be straightened out today".....
seriously?
"straightened out"?
i cracked up out loud during that prayer.

since we're going down in a blaze of glory with our old school pumpkin bread,
i thought she might need a couple more comfort items when she gets home today.
please don't judge me.
